The side dish that makes people ask what you did differently. The answer is garlic honey. These carrots are caramelized, sticky, aromatic, and done in 30 minutes.

Ingredients
- 1 pound (450 g) whole carrots, scrubbed and halved lengthwise (or quartered if thick)
- 2 tablespoons (30 ml) LaLumi Organic Garlic Infused Local Honey
- 1.5 tablespoons (22 ml) extra-virgin olive oil
- 1 tablespoon (15 ml) apple cider vinegar or sherry vinegar
- 4–5 sprigs fresh thyme (or 1/2 teaspoon dried)
- 1/2 teaspoon flaky sea salt
- 1/4 teaspoon freshly cracked black pepper
- Optional finish: a squeeze of lemon, toasted sesame seeds, or crumbled goat cheese.

Instructions
- Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper.
- In a large bowl, whisk together the Garlic Infused Honey, olive oil, vinegar, salt, and pepper until emulsified.
- Add the carrots and thyme sprigs. Toss until every carrot is coated.
- Spread carrots in a single layer on the sheet pan, cut-side down. Don’t crowd them—crowded carrots steam instead of caramelizing, and nobody wants steamed carrots at a dinner party.
- Roast for 15 minutes. Flip the carrots and brush or drizzle with any remaining glaze from the bowl.
- Roast another 10–15 minutes until the edges are deeply caramelized and the honey glaze is sticky and golden.
- Transfer to a serving plate. Finish with a squeeze of lemon, a scatter of sesame seeds, or crumbles of goat cheese if desired. Serve warm.
Substitutions
- No carrots? Parsnips, sweet potatoes, or delicata squash all work beautifully with this glaze.
- No fresh thyme? Use 1/2 teaspoon dried thyme or a few sprigs of fresh rosemary.
- No apple cider vinegar? Any mild vinegar (white wine, rice) works. The acid brightens the honey glaze and keeps it from being one-note sweet.

Make It Easier
Buy pre-washed baby carrots and skip the halving. Toss, spread, roast. The glaze does all the work.
Storage
Refrigerator, covered, up to 3 days. Reheat in a 375°F oven for 8–10 minutes to re-crisp. Microwave works, but you’ll lose the caramelized edges.
